The kitchen (see the floorplan) is set on top of the rear wheels, forward of the bathroom and aft of the main area. It's about 80 ft2, or a third of my total floor area. The counter above the battery compartment doubles as a workbench.
I've done the kitchen and bathroom with tumbled slate floors and granite (tile) countertops.
The standard practice for installing stone in fixed homes is to give it the most rigid base possible, and install using concrete-based adhesive and grout. In a vehicle, which will be unavoidably twisting and flexing at least some of the time, that really isn't an option. I figured I needed to glue and grout with something rigid enough to avoid cracking during everyday use, but flexible enough to take some of the strain when going down the road.
I ended up choosing polyurethane glue to attach the tile, StarQuartz grout for the slate floor, and epoxy for grouting the countertops. Not an epoxy grout, just a normal two-part epoxy with black dye.
The cabinets are all entirely custom (thanks Dad!); the door are rice paper framed in wood. The overhead cabinets have friction hinges to hold them open while in use.
